Fluffy Buttery Scones Recipe

Ingredients:

  • 560 g flour (plus extra for shaping)
  • 30 g baking powder
  • 200 g very cold butter (grated for easier mixing)
  • 100 g white sugar
  • ½ tsp salt
  • 300 ml half-and-half (equal parts cream and milk or just milk)
  • 1 large egg
  • 1–2 tsp vanilla extract (optional)

Instructions:

Prepare the Dry Ingredients:

  1. In a large bowl, combine the flour, baking powder, sugar, and salt.

Incorporate the Butter:
2. Grate the very cold butter into the dry mixture.
3. Use your fingers to rub the butter into the flour until the mixture resembles coarse breadcrumbs.

Mix the Wet Ingredients:
4. In a separate bowl, whisk together the half-and-half, egg, and vanilla extract.

Form the Dough:
5. Gradually add the wet ingredients to the dry mixture, gently combining until the dough just comes together. It should be slightly sticky but manageable.

Shape the Scones:
6. Lightly flour a clean surface. Turn the dough out onto the surface and shape it gently with your hands.
7. Flatten the dough into a 2–3 cm thick round.
8. Cut out circles using a 5 cm cutter or glass.

Pro Tip: Flour the cutter before each cut to prevent sticking and ensure clean edges.

Bake:
9. Arrange the scones on a baking tray lined with parchment paper. Brush the tops with milk or an egg wash for a golden finish.
10. Bake in a preheated oven at 200°C (400°F) for 12–15 minutes, or until puffed and golden brown.

Serve and Enjoy:
11. Serve warm with butter, jam, or clotted cream.

Pro Tips:

  1. Use half-and-half for a creamy, rich texture.
  2. Grating the butter makes it easier to incorporate and ensures flaky scones.
  3. Handle the dough gently to keep the scones light and fluffy.
